I don’t think summer would be the same without pickles. You know these guys, always sitting there on the table over shadowed by mustard and ketchup. Pickles are very underrated. I find them to be highly useful and versatile. I use the juice for dressings, and to spice up my salad sandwiches. By the way these fit nicely in a picnic basket.
With the power of pickling your own, you become empowered with a never ending supply of flavor combinations. Oh yeah! let the experiments begin! You can pickle anything and can create your additives for your pickling spice to make all sorts of interesting flavors. I for instance like to add a bit of fennel seed and dried Pasilla peppers to mine. That’s just how I roll….
Here’s what I made today, Most are made with white vinegar and the big one is made with a mix of apple cider vinegar and red wine vinegar:
Marks Spicy Pickles
3 cups white vinegar
1.5 cups sugar
1/2 tsp celery seed
1/2 tsp mustard seed
1/2 tsp fennel seed
2 tsp salt
1 large dried pasilla pepper, cut up
1 jalapeno, cut up
1 bunch dill
bunch of cucumbers
-add everything bu the dill and cucumbers to a pot and bring to a boil
-Meanwhile get your jars and fill with your dill and cucumbers. when the water mix comes to a boil take it off and let it sit for a minute, then fill your jars. This batch should fill 3-4 packed jars
